Beef Noodle Soup (Third Attempt, The Keeper)

Why keptReverse-engineered from a no-name shop in Taipei with six stools and an impatient auntie. Attempt three finally deserved the memory.
Final verdictEighty-five percent of the original. The remaining fifteen percent is eating it on a stool in Taipei.
METHOD
  1. Brown the whole shank in oil past the point that feels right, into the point that feels slightly wrong. Every surface. Ten to twelve minutes. Do not rush this; attempt one rushed this.
  2. Remove beef. In the same pot, fry ginger, garlic and scallion until fragrant, then the doubanjiang until the oil turns brick red.
  3. Add both soys, sugar, spices, tomato. Return the beef. Add the measured water.
  4. Simmer, lidded and lazy, 2.5 hours, until a chopstick enters the shank without negotiation.
  5. Rest the whole pot overnight in the fridge. This is not optional. Whatever happens at 3 am is the actual recipe.
  6. Next day, lift the fat, slice the beef against the grain, reheat gently. Cook noodles separately, always.
  7. Bowl order matters — noodles, broth, beef, greens, scallion. Eat within four minutes of assembly.

WHAT CHANGED FROM THE ORIGINAL

Original shop broth is thirty years old, which is unavailable at retail. The overnight rest is the home substitute — the closest a home cook gets to time travel. Tomato is also unconfirmed in the original and non-negotiable in mine.

MISTAKES ON RECORD

Attempt one — timid browning, too much water, beef-flavored disappointment. Attempt two — doubled the doubanjiang out of ambition; the broth tasted angry and the salt arrived in a wall. Respect the 2 tbsp.

INGREDIENTS
  • 1 kg beef shank, whole
  • 2 tbsp neutral oil
  • 4 slices ginger
  • 6 garlic cloves, smashed
  • 3 scallions, in thirds
  • 2 tbsp doubanjiang (NOT four; see mistakes)
  • 2 tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp rock sugar
  • 2 star anise, 1 small cinnamon stick, 1 bay leaf
  • 1 tomato, quartered
  • 1.6 L water (measured, not vibes)
  • Wheat noodles with some chew
  • Pickled mustard greens and scallion to serve
